Buckeye Bark

2.5 pounds milk chocolate candy coating
1 pound creamy peanut butter
2 cups powdered sugar
1 stick butter substitute, melted
1 tsp vanilla

Melt half of the chocolate (1.25 pounds) in a microwave-safe bowl, according to the directions on the package (about a minute).
Line a cookie sheet with parchment paper, and pour the melted chocolate into a rectangle. Place in the freezer.
In a large bowl, beat the peanut butter, powdered sugar, butter and vanilla until creamy.
Spread the peanut butter mixture over the chocolate layer, and place the cookie sheet back into the freezer.
Melt the remaining chocolate, and spread over the peanut butter layer.
Freeze until set, then break into small pieces with a knife.
Store in the freezer.
