Cheesecake Bars

1 (16.5 oz) pkg refrigerated sugar cookie dough
2 (8 oz) pkgs cream cheese, softened
3/4 cup sugar
2 eggs
2 tbsp lemon juice
1 tbsp grated lemon zest
2 1/2 tsp vanilla
graham crackers, for topping
fresh strawberries, for topping

Preheat oven to 350.
Lightly spray a 13x9 inch baking pan with cooking spray. Crumble the cookie dough into the pan and use fingers to press into an even layer.
Bake for 20-25 minutes, or until golden brown. Set aside.
Beat the cream cheese and the sugar with a mixer until smooth.
Beat in the eggs one at a time, then the lemon juice, zest, and vanilla.
Pour the mixture over the crust and hit the pan on the counter to remove air bubbles.
Bake at 350 for 25-30 minutes, or until the cheesecake layer is just barely set when tapped with a finger.
Cool on a wire rack, then refrigerate for 2 hours until chilled and firm. Cut into bars and garnish with graham cracker crumbs and strawberries, if desired.
