Chicken and Black Bean Quesadillas

Ingredients:

1 can shredded chicken

1 tablespoon lime juice, about 1/2 lime

1 tablespoon olive oil

1 garlic clove, minced

salt and pepper, to taste


1 (15-ounce) can black beans, drained and rinsed

1 tablespoon lime juice, about 1/2 lime

1 teaspoon garlic powder

salt, to taste


1 cup Mexican cheese

whole wheat tortillas


Instructions:

  • Place the shredded chicken in a small bowl.
  • Add the lime juice, olive oil, garlic, salt, and pepper.
  • Stir until thoroughly combined.
  • Rinse and drain the black beans. 
  • Put the beans, lime juice, garlic powder, and salt into the food processor and blend until smooth. 
  • Spread a thin layer of bean mixture on a tortilla, and place in a small skillet over medium heat.
  • Cover half of the tortilla with the chicken mixture, and top with the cheese. 
  • Fold the tortilla in half, and cook on both sides until golden brown.
  • Serve with salsa, pico de gallo, sour cream (or Greek yogurt), or guacamole.
