Cinnamon Muffins

for the muffins:
1 1/2 cups flour
1/2 cup sugar
1 1/2 tsp baking powder
1/4 tsp nutmeg
1/8 tsp salt
1 egg, lightly beaten
1/2 cup milk
1/3 cup butter, melted
1 tsp vanilla

for the topping:
1/4 cup sugar
1/2 tsp cinnamon

Preheat oven to 350
In a large bowl, mix together the flour, sugar, baking powder, nutmeg, and salt. Make a well in the center of the mixture.
In a small bowl, whisk together the egg, milk, butter, and vanilla.
Pour the egg mixture into the well of the flour mixture and stir until just moistened. The batter will be lumpy.
Line a muffin pan with liners and use a spoon to fill each cup about 2/3 of the way full.
Make the topping by mixing together the cinnamon and sugar. Sprinkle the mixture over the top of each cup.
Bake for about 20 minutes, or until a toothpick inserted in the center of a muffin comes out clean.
Cool the muffins on a wire rack for about 5 minutes.
