Lemon Butter Cookies

1 cup butter, softened
1 1/2 cups powdered sugar
1 egg
1 tbsp lemon juice
2 1/2 cups flour
1/2 tsp baking soda
1/2 tsp baking powder
1 tbsp lemon zest

Preheat oven to 350.
In the bowl of a stand mixer, beat together the butter and powdered sugar. Add in the egg and lemon juice and beat until fluffy. Slowly beat in the flour, baking soda, baking powder and lemon zest until well combined.
Line a baking sheet with parchment paper, and use a large scoop to form the dough into balls.
Bake for 12-14 minutes, or until the edges of the cookies are just starting to brown.
Allow to cool on a wire rack.
