Mini Peanut Butter Cups

12 oz chocolate chips
1 cup reduced fat peanut butter
1/2 cup powdered sugar
1/4 tsp salt

In a small microwaveable bowl, melt half (6 oz) of the chocolate chips at 50% power for 1 minute. Remove from the microwave and allow to sit for a few seconds, as they will continue to melt during this time. Stir with a fork until fully melted. 
Line a mini muffin tin with baking cups, and fill each one with chocolate. Use a spoon to fill the bottom of each cup, and bring the chocolate 3/4 of the way up the side of each cup. 
Place the pan in the freezer for 15 minutes. Meanwhile, beat together the peanut butter, powdered sugar, and salt until fully smooth.
Fill each chocolate cup with a spoonful of the peanut butter mixture, and return to the freezer for another 15 minutes.
Melt the remaining chocolate in the same bowl as before, again for 1 minute at 50% power. Use a spoon to spread a layer of chocolate over each peanut butter cup, covering completely.
Freeze for a final 15 minutes.
