Oatmeal Pancakes with Strawberry Sauce

for the strawberry topping:
12 oz strawberry preserves
1 cup quartered strawberries (about 15 strawberries)
2 tbsp butter

for the pancakes:
1/2 cup quick oats
1/2 cup flour
1 tbsp sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
3/4 cup buttermilk
1/4 cup milk
2 tbsp vegetable oil
1 egg

Heat the strawberry preserves, fresh strawberries, and butter in a small saucepan over low heat, stirring occasionally.
While the strawberry sauce is heating, begin on the pancakes. Beat all of the pancakes ingredients together with a whisk, just until smooth.
Spray a skillet with cooking spray and heat over medium heat. Pour 1/4 cup batter into the pan for each pancake, being careful not to crowd the pan.
Cook the pancakes until they are puffy and dry around the edges.
Flip and cook until golden brown.
Top with the strawberry sauce and serve.
