Simple Sugar Cookies

1 1/2 cups flour
1/2 cup butter
3/4 cup sugar, plus additional sugar for rolling
1 egg
1/2 tsp baking soda
pinch of salt

Preheat oven to 375.
Beat together all ingredients until a soft dough forms.
Use a small ice cream scoop to form the dough into balls, and roll the balls in the extra sugar.
Place the balls on a lined baking sheet and bake for 10-12 minutes, or until golden brown.
Place the cookies on a wire rack to cool.
