White Chocolate Oatmeal Cookies

1 1/4  cups butter, softened
3/4  cup brown sugar
1/2  cup sugar
1  egg
1  tsp vanilla
1 1/2  cups flour
1  tsp baking soda
1  tsp cinnamon
1/2  tsp salt
1/4  tsp nutmeg
2  cups quick oats
1 cup white chocolate chips

Preheat oven to 375.
In a large bowl, beat the butter, brown sugar, and sugar until creamy.
Beat in the egg and vanilla.
Add in the flour, baking soda, cinnamon, salt, and nutmeg and beat thoroughly.
Stir in the oats and the white chocolate chips.
Use an ice cream scoop to form balls of dough, and place on a prepared baking sheet.
Bake for 9-10 minutes, or until the edges are golden.
